Cascina Val del Prete, or 'valley of the priest', is a winery in the Piedmont region of Italy, and the producer of this Friday's Wine Down feature, Serra de' Gatti Barbera d'Alba.

This Barbera presents a deep ruby red and violet tone, an aromatic bouquet, both fruity and spicy, and a taste that is tannic, round and structured.

Chef's special, designed with the Barbera d'Alba in mind, is a cast iron seared beef tenderloin with a wild mushroom risotto, glazed baby carrots, and truffle balsamic.
